You are right about the cost but my family liked that it wasn’t too sweet so the 1/4 cup of confectioner’s was just right for them. And for the life of me, I could not find any lady fingers so I substituted sponge cake which worked out great. While this was a simple recipe, the specialness of it, to me, comes in using mascarpone.

The photo here looks like fresh blueberries, not pie filling. If I were to make this again, I would try a thin layer of pound cake instead of ladyfingers, increase confectioners sugar to 1/3 cup at least, add fresh blueberries or more filling. And I love the idea below to use cream cheese instead of marscapone.

A good idea, could be better.

It was called Dr. Bird Cake. It was like a pound cake and had crushed pineapple, bananas, and coconut and maybe nuts. But I haven’t been able to find it anywhere, not even online. Do you have a similar recipe for pound cake that incorporates those flavors? I would appreciate it if you could find something. You are the best cook I know and I love your cookbooks.
