Paula’s Southern chicken & dumplings recipe is one of her most popular, and for good reason—it’s the perfect Southern comfort food recipe as the weather starts cooling down. With homemade cut dumplings, tender chicken, and a creamy base, no one does it better—trust us; Michael tried! Keep reading to learn how to make Southern chicken and dumplings from scratch, just like Paula’s grandmother taught her to do.

You’ll need the following ingredients:

  • 4 quarts water
  • 1 (10¾-oz) can condensed cream of celery or cream of chicken soup
  • 1 teaspoon Paula Deen’s House Seasoning
  • 2 chicken bouillon cubes
  • 2 bay leaves
  • 1 large onion, chopped
  • 3 ribs celery, chopped
  • 1 (2½-lb) chicken
  • 2 cups all-purpose flour mixed with 1 teaspoon salt
  • ¾ cup ice water
  • 2 tablespoons corn starch (optional)

You’ll start with the homemade chicken broth. Be sure to cut the chicken up, but leave the skin on—you’ll remove the skin and bones later, but in the meantime, they add a lot of flavor! Add the chicken, celery, onion, bay leaves, bouillon, and House Seasoning to a large stock pot with four quarts of water. Cook it at a low boil for 30 to 45 minutes, until the meat starts falling off the bones. At that point, you can remove the skin and bones, along with the bay leaves. Return the skinned and de-boned chicken back to the pot.

While the chicken is boiling, start prepping the dumplings.

Put the flour and salt mixture in a mixing bowl, form a bowl in the flour, and start adding a little dribble of ice water to the center of it. Using your hands, work the water, flour, and salt mixture from the center of the bowl to the sides of the bowl, adding a bit more water at a time until all the flour is incorporated. The batter should feel tough at this point.

Now, start to knead the dough and form it into a ball. Flour your counters or dough board and use a rolling pin to roll it until it’s 1⁄8-inch thick. The dough will be firm, and you should be sure to work from the center when rolling. Set the dough aside to air dry for a few minutes.

Once your dumplings are prepped and you’ve returned the chicken to the pot, you’ll add the condensed soup to the stock pot, letting it continue to boil. It’s your choice whether you prefer cream of celery or cream of chicken soup—both create a thick, creamy, and flavorful base for your chicken & dumplings. At this time, you can decide if you want a thicker stock. If you do, create a slurry by combining the cornstarch with ¼ cup of water. Add this slurry to the stock.

Now, return to your dumpling dough, cutting them into 1-inch-wide strips. Add the dumplings to the pot one at a time to prevent sticking. Do not stir after the dumplings have been added to the pot. Instead, shake the pot gently in a circular motion until the dumplings are submerged.

Cook the dumplings until the dumplings float and are no longer doughy. This should take approximately 3 to 4 minutes, but be sure not to overcook them. Once they’re finished, you’re ready to serve!

Making a Southern chicken and dumplings recipe from scratch is a labor of love, but after just one bite, you’ll realize why it’s worth it!

Of course, that doesn’t mean there aren’t great shortcuts if you really need them. Instead of starting the dumplings from scratch, you can swap out the dough by using 3 cups of Paula Deen Original Recipes Mix combined with 1½ cups of buttermilk. Then roll out the dough and cut into strips. You can also purchase frozen dumplings in most supermarkets if you don’t have time to make them yourself. In fact, even Paula uses frozen dumplings at times!

If you want to see the Queen of Southern Cuisine make her Southern chicken & dumplings recipe for herself, you can watch her here.

Have you tried making Paula’s recipe from scratch or do you employ some shortcuts, like store-bought dumplings? Let us know in the comments below!

Spring is here, and with it comes the chance to enjoy the bright, fresh flavors that the season brings. As the weather warms up and produce begins to bloom, it’s the perfect time to swap out heavier dishes for lighter, more vibrant meals that showcase the flavors of the season. Think citrus, herbs, fresh greens, seafood, and more—are y’all ready for a month’s worth of spring dinner ideas?

One of the standout flavors of spring is, of course, citrus—its bright acidity can really bring out the best in a dish. Take Paula’s Lemony Shrimp and Caper Pasta, for example. The tangy lemon elevates the shrimp, while capers add a briny bite that pairs beautifully with the light pasta. If you’re looking for another citrusy option, this Shrimp Scampi with Artichokes and Basil brings a punch of fresh herbs and a rich, buttery lemon sauce to create a delightful balance of light yet indulgent flavors.

Spring is also the season to enjoy tender, fresh greens and vegetables. Try Paula’s Fettuccine with Zucchini Ribbons or her Shrimp and Pea Risotto to highlight some of the season’s best vegetables.

Incorporating these flavor profiles into your spring dinner recipes—whether it’s citrus, fresh herbs, or the sweetness of fruit—will keep mealtime fresh and exciting for the whole family.

Pasta is often thought of as a heavy, cold-weather meal, but these spring pasta ideas prove that pasta can be delicious all through the spring too! It’s amazing what fresh veggies, seafood, and light, bright flavors can do to these spring pasta recipes!

Fresh herbs and veggies are one of the quickest ways to take a pasta dish from winter to spring. Basil, spinach, tomatoes, lemon, asparagus, zucchini—all are perfectly at home in a pasta dish. Since the world is awakening this time of year, it makes sense to use nature’s bounty to jazz up dinner. It adds a lightness to any recipe—especially a spring pasta dish!

If you ask us, seafood always has a place in a pasta dish, too—while a classic meatball or ground beef is delicious, crab, lobster, shrimp, and the like always feel lighter and fresher! Consider Paula’s Tomato and Crab Spaghetti or her Linguine with Candied Tomatoes and Shrimp with a Wine & Butter Sauce—they’re just begging to be served al fresco on the back patio, under the warm sunshine. The seafood adds a decadent touch without weighing you down.

So, next time you’re looking for something delicious for dinner, give Paula’s spring pasta ideas a whirl. They prove that pasta can be perfect for spring when you keep it fresh and vibrant! Which spring pasta recipe will you try first? Let us know in the comments below!

We love weeknight chicken dinner recipes, don’t y’all? Chicken is one of our very favorite proteins to make during the week because it’s easy to prep, easy to cook, and so versatile! Chicken can be cooked in a million different ways. We can fry it, roast it, or grill it. We can put it in a casserole or a soup. We can wrap it in bacon, stuff it with cheese, or smother it in sauce. Versatile just doesn’t really seem to cover it, does it?

Chicken breasts are also one of the more affordable proteins out there. And most grocery stores sell already-cooked rotisserie chickens, which can serve as a great starting point for tons of weeknight chicken dinner recipes.

Lastly, we love that chicken is a healthy, lean source of protein. Obviously, it can be prepared in less-than-healthy ways, but it’s at least a healthy starting point.

Do you cook a lot of weeknight chicken dinners? We’d love to hear some of your go-to’s and whether you’ll be adding any of the chicken recipes below to your regular rotation! Let us know in the comments below.

St. Patrick’s Day is a very, very big deal here in Savannah. We’re home to the second largest St. Patrick’s Day parade in the country, second only to the one in New York City, so as our streets fill with as many as half a million tourists, we’re always looking for ways to help make the day go a little smoother. And one of those ways involves easy-to-carry and easy-to-eat St. Patrick’s Day food recipes.

Today we’re sharing a twist on one of our favorite traditional Irish recipes—Miniature Shepherd’s Pies! They’re the perfect thing to keep your belly full, which any St. Paddy’s Day reveler will tell you is crucial, because they work as appetizers or as an on-the-go entrée! This recipe is courtesy of Cooking with Paula Deen magazine, where you can always find easy and delicious recipes for holidays and beyond. Click here for a limited-time deal on an annual subscription, and then, let’s get to cooking!

You’ll need the following ingredients to get started:

  • 1 pound ground beef
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • ½ cup frozen peas and carrots, thawed
  • ⅓ cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ (24-ounce) package frozen cut russet potatoes (we used Ore-Ida Steam n’ Mash Cut Russet Potatoes)
  • ½ (5.2-ounce) package garlic and herbs cheese (we used Boursin Cheese Spread)
  • 1 (10.5-ounce) can refrigerated original buttermilk biscuits
  • ½ cup crushed potato chips
  • Garnish: chopped fresh chives

First up, you’ll want to preheat the oven to 375˚F and spray 10 muffin cups with cooking spray.

Then, in a large skillet, brown the ground beef with the onions and garlic over medium heat until the meat is crumbly and mostly cooked through. Drain it, then mix in the peas, carrots, ketchup, apple cider vinegar, salt, and pepper, then remove the pan from the heat.

Next up, cook the potatoes according to the package directions, then stir in the cheese until well combined.

Now you’ll want to press the biscuit dough into the bottom of the prepared muffin tins, pushing them up the sides so they make individual biscuit bowls. Top each bowl with the meat mixture, gently pressing down, and top each one with the cheesy mashed potatoes.

Bake approximately 20 minutes, or until the biscuits are a pretty golden-brown color. Sprinkle each individual shepherd’s pie with the potato chip crumbles and chopped fresh chives.

These are absolutely perfect as a St. Patrick’s Day appetizer recipe or eat-on-the-go entrees for lunch or dinner—especially if you happen to find yourself exploring downtown Savannah’s St. Patrick’s Day festivities!
