Divided means you would divide the butter in half. So, you would use 1/2 cup butter with the eggs and the remaining 1/2 cup on top of the buns.

These definitely stick way too much to the paper liners to look professional. Super yummy however. Make sure you pay close attention to your size or else you will end up with a giant overflow.

The only thing I did differently was I used blanched and chopped almonds rather then pecans – simply because I’m not a fan of pecans and I LOVE almonds! haha.
The only thing I didn’t enjoy was trying to remove them from the pan… the liners really stuck on… like glue!
I ended up having to pry as much of the cupcake out and then removed the bit of liner that came out on it. My pan is still soaking in the sink with what’s left of the liners in it!! 🙁
I think next time I’ll just spray some Pam on the pan rather then use liners…. and hey, I can always put them in liners once they’re cooked! 🙂
Oh, and I would suggest not adding the apples to the filling mixture until you’re ready to use it. I think that may have been part of the reason I had issues with the liners… I let my filling sit for about 10 minutes and the juice/moisture from the apples had made the sugar dissolve so when I rolled them up it was difficult and the filling kinda got everywhere… flowing down over the sides once they were in the liners and whatnot and I suppose it just caramelized once it hit the heat of the oven…
But all in all I loved these! oh, and my Mama really appreciated them as well! 😀

I made them with Paula’s regular cinnamon roll glaze because I didn’t have apple cider on hand, but it worked out well. Very decadent, and fantastic warmed up in the microwave. But … I don’t quite see the point of making them as cupcakes. In my case, the melted butter spread on top of them before baking dripped so much that the cupcake liners stuck to both the cupcakes AND the pan, so I just removed them all before serving. Felt like I wasted liners! Also, I recommend eating with a fork because they’re messy, but this is certainly not a negative! Yum. 🙂
