I have been wanting to write you to ask for your help recreating a recipe of my Aunt Amy. She would make these thin crispy pancakes with canned salmon in them. As a child I hated fish but I LOVED these crispy little pancakes she would make. I would watch her make them but she did not have a recipe written down for them. She just threw them together. I tried to recreate them using Bisquick but they were too doughy and heavy. Her batter was thin and light and she could pour them into the skillet. They were crispy when you bit into them. Please help. I feel sure you could suggest something similar.
