Oh my word, Mrs. Paula! My apartment smells divine! I roasted my pecans with some butter and salt before I chopped them for the Cream Cheese Frosting once the Banana Nut Cake cools. Love Deen Brothers lighter ones too. Do you have GLUTEN FREE ones too?? My doctor recommends WHEAT FREE AND GLUTEN FREE for me.

I often make the cream cheese frosting, usually for my homemade carrot cake, this is the first time I have seen the recipe with butter in it, yum, bet that makes it even more creamier and rich. May have to adapt my old stand by cream cheese frosting. I usually use walnuts for everything, even my carrot cake, so don’t know why you couldn’t use walnuts instead of pecans if you wanted to. I think it’s just a personal preference, and I prefer walnuts! Keep the fabulous recipes coming Paula, haven’t tried one yet I didn’t like(and probably never will)!!! :o)

I want to take this to a get together this week-end, but a layer cake is very inconvenient. What changes would I make to bake this in a 9×13 pan?

I had some ripe bananas that I wanted to use, and didn’t want to make banana bread again. This recipe had great reviews, so I decided to give it a try. It was super easy and quick to make. I used walnuts instead of pecans, since that’s what I had on hand. I also adapted the frosting to make a cream cheese glaze. Other than those two minor changes, I followed the recipe exactly. I baked it in a bundt pan for about 40 minutes. I sent it to work with my husband to share with his co-workers. The exact text I got a few minutes ago is “Save recipe. Best cake ever. Almost gone. Thanks baby”. I do believe this one will become my go-to use for those bananas we don’t eat in time. Thank you Ms. Paula for making me look good and giving my husband bragging rights.
