4-5 lbs of sweet potatoes – cubed
3/4 cup fresh orange juice
1 orange, zested
1/4 cup bourbon
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
5 large sweet potatoes, peeled and cut into 1/4″ slices
1/3 cup orange marmalade
1/3 brown sugar
2 tablespoons sweet butter cut into bits
salt, to taste
1/3 cup walnuts, coarsely chopped
