You probably over-mixed the batter introducing too much air. The other reason could be that taking it out of the oven immediately after baking. You may think your kitchen was warm, but it’s not as warm as the oven itself.

Both the recipe and the video indicate the crust should be pressed into the bottom of the pan. However, when Paula does the “reveal” there’s crust all the way up the sides of the cheesecake and all the way around. Do we also press the crumbs up and around the sides?

If you are referring to user's comments regarding the recipe you are certainly okay to follow their recommendation. It does sound like they are telling you to turn the oven off for that 15 minutes. It could be their oven is not calibrated correctly and keeping it in the still hot oven helps finish off the cheesecake.

Took the cheesecake out at 60 minutes was letting it cool on the counter it was about 10 minutes and a big crack right down the middle. No, my windows were not open and it was warm in my house. Does anyone know why this would have happened? It wants a rating I don’t know what it takes like since it’s now in my refrigerator for 4 hours as directions say so I’ll just give it a 1 rating for the big crack in the center of the cake.

Yes you can certainly use mini cheesecake pans instead of the larger one! And it freezes well for about a month!
