I think the brown gravy mix adds too much salt. I modified this using canned cherry peppers because I am not a fan of pepperoncini. I added no salt or seasoning to the roast since I use salted butter. I would make it again, as it is the most tender and flavorful pot roast you can imagine (Paula did not lie about that). However, you could omit the gravy mix or use a low sodium version or just use a beef base cube and a little water. I found the seasonings stuck to the meat and I had to flip it over to get the seasonings into the pot juices. So, I would specify to NOT use salted butter and low-sodium versions of the seasoning packets. I’m really staying off the salt so it was pronounced to me.

This will be my go to Pot Roast feast. I made a few additions to the process. Rubbed the roast with Worcestershire sauce and coarse black pepper. Added three cloves of fresh garlic. Gravy was fantastic.
